FOOD – No more blue cords? According to information from LyonMag, Lyon students should see it disappear from the menu of school canteens from September 2022.

“The cordon bleu is a bit the spearhead of ultra-processed food products, and as such it no longer has a reason to be in the menus of Lyon students,” said Wednesday, September 29 Gautier Chapuis, delegate advisor to Local Food and Food Security, in the Lyon monthly. According to LyonMag, regardless of the service provider, the 26,000 meals per day delivered to the canteens should be done without this dish based on breaded schnitzel, ham and cheese.

The City of Lyon, contacted by The HuffPost, however qualifies these remarks. In fact, it would be more a question of “avoiding hyper-processed products full of additives” and moving towards “organic, local, noble products”. The cordon bleu, one of the best-known example of processed products, is indeed part of the discussions, but the City does not confirm that it will be completely removed from the menus in 2022.

Anyway, this information raised some misunderstandings. The LREM deputy of the Rhône Bruno Bonnell, for example, wondered about this news, the same week when the Bocuse d’Or was won by France, and more precisely by a chef from Lyon, Davy Tissot.

Meatless menu

This desire to strive for the elimination of ultra-processed products goes in the direction of “a healthier and more responsible diet”, as noted on the city’s website.

Last February, the municipality had already announced the introduction of a “single menu without meat” (but not vegetarian). This menu, introduced for only a few weeks for health reasons, had been strongly criticized, and even caused a big quack in the majority and in government.

Meat was finally reintroduced into menus from April 26, though sparingly: “every five meals on average”.

During his campaign, Grégory Doucet had made a commitment to offer a vegetarian menu of your choice every day of the week in schools.
