But why will the prices go up? The price of wheat has climbed 30% in one year. Flour is therefore much more expensive, even though it sometimes represents more than 20% of bakery expenses. To compensate, a baker from Montpellier is preparing to increase the price of his baguette by five to ten cents. “With the rising prices of all commodities, we can’t afford to take it upon ourselves”, explains Jacques Cenatiempo, baker in Montpellier.
