Six new Michelin stars in Brittany – Bretagne – Le Télégramme

1 Six first stars in BrittanyOf the 41 new 1-star restaurants in France, six are located in Brittany: La Table d’Asten in Binic (22), L’Embrun in Brest, Le Saison in Saint-Grégoire (35), Le Gavrinis in Baden (56), Sources in Lorient (56) and La Tête en l’Air in Vannes. Six restaurants and as many chefs at their head: Samuel Selosse (La Table d’Asten), Guillaume Pape (L’Embrun), Ronan Kervarrec (Le saison), Luca Marteddu (Le Gavrinis), Nicolas Le Tirrand (Sources) and Clément Raby (La Tête en l’air).2 Seven have lost their starsOn the Breton Michelin map, seven establishments have lost their stars: Terre Mer in Auray (56), Le M in Brest, La Maison Tirel Guérin in La Gouesnière (35 ), L’Amphitryon in Lorient, La Ville blanche in Rospez (22), Aquamarine in Tréguier (22) and Le Roscanvec in Vannes. Today, 35 Breton restaurants now have a star.3 No three stars in Brittany and still two double stars In France, only two new establishments have won three stars: La Villa Madie in Cassis (Bouches-du-Rhône) with at its head, Dimitri and Marielle Droisneau, and Plénitude – Cheval Blanc, in Paris, with as chef, Arnaud Donckele, already three-starred at La Vague d’Or in Saint-Tropez (Var). In Brittany, no new restaurant has received a second star. Les Glazicks, in Plomodiern (29), and Le Coquillage, in Saint-Méloir-des-Ondes (35), keep their two stars and it will still be necessary to wait before a Breton restaurant is three-starred. The other winner is François Lhermitte, sommelier at the restaurant Julien Binz, in Ammerschwihr (Haut-Rhin). On the other hand, no Bretons rewarded in the categories “Welcome and service” and “Passion for dessert”5 “The green star” shines on La ButteAt Plouider (29), La Butte was awarded “The green star” which distinguishes “sustainable gastronomic experiences”. “This star rewards the deep commitment of our teams”, testified Nicolas Conreaux, the head of the northern Finistère establishment. “The green star” was also awarded to Domaine Riberach – La Coopérative, in Belesta (Ariège); Toya, in Faulquemont (Moselle); La Table du Gourmet, in Riquewihr (Haut-Rhin), Les Belles Perdrix de Troplong Mondot, in Saint-Émilion (Gironde) and Auberge Sauvage, in Servon (Seine-et-Marne).6 “Too few women” “I notes that too few women are part of the selection”, regretted Gwendal Poullennec, international director of the Michelin Guides, who also announced: “This year, we wish to particularly highlight the local terroirs. They contribute so much to the worldwide recognition of our gastronomy”.
